Sukhdev dhaba on the way to murthal has very good amritsari kulcha and aaloo paathas. Also you can try the Moolchand area in Delhi for some dhaba type food.

Mid Way on the way to Jaipur serves great food.

1: Hotel Ummiya Annapurna Kathiyawad
Where: Anand. Once a popular stop along the highway. It has now been bypassed

with the new expressway. Technically it is still on NH8.

The food
: Most of the food is cooked over wood fires, and the rustic flavour mixes well with the delicate combination of spices. The rotis called bhakris have a distinct flavour after they are cooked on claytavdi. Be ready for some serious spice and remember this is powerhouseKathiyawadcuisine, it is NOT sweet Gujarati cuisine. This one bites right back.

Must
-haves: The deliciouslassan aloo, sevtamatar, besangatta, and the ever presentrotla(local bread). This is served with white jaggery and ghee. The accompaniments are equally good and include the papads, fried green chillies, onions, and some tastyachaars(pickles).
Anand district, NH 8, Gujarat

I love the Gulshan Dhaba in Murthal. The Aloo mix parantha topped up with White Mhakhan (Butter) along with a chai (tea) is simply awesome! Love it :-)

Wow! ;-)

Also, though not along the highway, Laxman Dhaba in Qutub Institutional Area (Delhi) is an awesome place for paranthas, chai, maggi, macaroni and omelette-bread! If you're a meat eater, their Keema Parantha is to-die-for! The place is open till 12 AM.

On the Dehradun Mussoorie road we have a lot of maggi points. The best part of having a hot plate of maggi there is that you can simultaneously enjoy a beautiful view.

Thse maggi points serve Maggi Noodles, Chai, Cold drinks and Snacks. Better than any Punjab da dhabba and kakke da dhaba.

My favourites:

Sharma Dhaba ( Sikar Road from Jaipur ) - Try the mawa naan or mawa roti here !

Deepu Chouhan's dhaba
in Kanpur (near Bhauti) - for finger-licking good punjabi food.

Rao's Dhaba near Bhiwadi (on NH-8 - Delhi-Jaipur highway) - everything tastes good.

Excellent food been here many time

Chilika Dhaba, Barkul, NH5, Orissa: This is apparently the best dhaba in the world.” It’s next to the Chilika lake and serves great seafood. They especially recommend the chilli prawns and giant crab. It’s a high energy sort of place serving tasty vegetarian food and prawns, crabs, fish curries, and just about every type of seafood.

The Chilika Lake is walking distance ensuring that all the food served is fresh. Each preparation is made dhaba style which means plenty of spices, plenty of colour, and a lot of deep frying.

When it comes to sudden urge of eating in dhaba without going too far from gurgaon, Convergys dhaba is the point to go, does not remember the real name of dhaba however it is right beside famous convergys building on NH8. Aloo parantha with extra butter along with tea is a delicious affair.

Not a dhabha dhaba, but Sunset Point on the way from Ranikhet to Nainital is an amazing pretty little stop over for anyone craving for the local specialty, Kadhi Chawal. Fish curry and rice is another favourite among the locals and the tourists. And not to forget, going by the name, the view is spectacular.

Take the NH 6 after Kona Expressway while going from Calcutta to Haldia or Kharagpur. Azad Hind Dhaba on the left- the food is absolutely fantastic. Must try stuffed alu nun with egg bhujjee with choley. The tandoori dishes are also very good.

Jhilmil Dhaba on the Karnal Road is a very famous stopover. While the best food here is your standard parantha and dahi, the dhaba has lots of colourful toy shops around. As a kid, I loved stopping at this particular place!

Not essentially a dhaba, Rainbow food joint at Jaipur, is a great place to have Rajasthani thalis with all the fanfair. Minus the extravagant pricing. It's right by the road that leads you to Amber Fort, across Jal Mahal. Another not to miss are the ice creams here that are as gigantic as Rajasthan's epics and folklore.
