I have done many in this list - and sure would like to cover them all (Manali-Leh is on the cards next). I would love to add a few:
1. Chennai - Pondicherry ECR: Amazing freeway with the azure Bay of Bengal giving you constant company.
2. Kushalnagar to Madikeri (Coorg) - Gentle winding roads through the lush green coffee estates.
3. Jaisalmer to Barmer - Zip through the desert. Watch out for camels crossing the road.
....and so many more across India.

Road to Ooty is precisely from Chalakudi via Valparai one of the best I have ever come across in terms of Greenery
u can also consider Chandigarh to Shimla...
i have covered many but leh route to be covered.. all places are awesome..anybody have plans to drive from bangalore to shimla next year.. planning for it but need to go in groups..

Try Chamba to the extremely isolated Pangi Valley through the Sach Pass. Not possible in the winters due to snowfall.
