about dum pukht

One of the finest restaurants of its kind in the country presenting its age-old recipes and authentic flavours from the kitchens of the Nawabs of Awadh. Dum Pukht or slow oven cooking is a cooking technique associated with the Awadh region of India, in which ingredients are cooked over a very low flame in a sealed ‘handi’, so as to retain their rich flavours.  Its new look goes well with the new menu. Both appear on the surface to have the patina of age, yet both conceal a surprisingly nouvelle touch. It shows in the décor that uses elements of mirror work on the arches and walls. The modern face of the food lies in the generous offerings for vegetarians. Guchchi Sabz-e-Zar is unmissable. Though there are biryanis and what is undoubtedly the finest Kakori in the National Capital Region, newer dishes have been created, especially Kham Khatai and Maash Qaliyai. Murgh Chandi Tikka has silver leaf on the dough, which incredibly doubles up as a tasty roti!
