What do people extract by mining in Udaipur?

We are not sure exactly what you are looking for. If you mean what is mined in Udaipur, here is a list.

1. Copper

In ancient times, areas like Hinglaz Mata in Udaipur district were known for mining. The copper ware that is found here by archaeologists proves the same. The Udaipurwati Villages are built over large slag heaps.

2. Phosphate

There are huge phosphate mines in Jhamarkotra, 26 km from Udaipur city. The phosphate mined here constitutes 98% of rock phosphate production of India. Phosphate is used for manufacturing fertilisers.

3. Marble

The Morwad Mines situated 15 Kms from Rajnagar on Udaipur - Rajnagar, This is a prime place for mining marble in various colours like white, green, beige, onyx, pink, black, brown.
Apart from this, some other stones like Sandstone, Slate, Granite and Kota Stone are also mined in and around Udaipur. 

The Zinc refinery of Hindustan Zinc limited is also located in Debari, near Udaipur.
