For a city that really doesn’t have any specific cuisine to its name, Chandigarh sure is obsessed with food. Over lunch, you are likely to find the people talking about dinner. Ask where to get the best in cuisine, and you will likely ignite a heated debate among the area natives, each scorning the other’s choice. The menu reflects Chandigarh’s original role of being the capital city of Punjab and its strong bond with the state. It is heavily influenced by traditional Punjabi cuisine. Everyone, no matter what neighborhood they're from, wants a plate of Butter chicken and tandoori roti, has a favourite spot for sarson ka saag and makke di roti, and holds strong opinions about the proper flavor for Lassi and Dal Makhni.

For those who are unaware, the main feature of any Punjabi food is the extensive use of ghee and butter. Pulses are cooked on a slow flame with the traditional Punjabi tadka. Usually the food is prepared in earthen tandoors (clay ovens for cooking and baking), giving the food an incredible aroma.

Lately, the menus reflect the progressive nature of this small city, as it keeps pace with the latest in global cuisines. It's easy to find Oriental, Thai, French and Italian influences—and increasingly European as well. Chandigarh is one of the more unique places in North India to eat.
