  • Wazwan

    Kashmiri Wazwan is a royal multi course meal with 36 courses. The preparation of Wazwan involves overnight cooking of the meat by "Vasta Waza", a master chef and his assistants. Once it is ready, the guests are seated in groups of four and the meal is served in a metal plate called the trami.

  • Seekh Kebabs are also a part of this meal and cooked till they acquire a crisp texture. Rogan Josh involves cooking of meat using Kashmiri chillies so that the dish is rich in red colour. Yakhni, is a curd based preparation having a delicate flavour. Gushtaba, which is the last item to be served in a traditional wazwan, are meatballs moulded from "Rista" but cooked in thick gravy of fresh curd base. Dum-Aloo and Shaman are vegetarian dishes commonly served to the vegans.

  • Tujji

    Tujji (mutton tikka or mutton seekh kebab) is one of the famous local dishes in Srinagar. It is made by cooking soft mutton balls on an iron rod; the balls are then heated on coal flames. Traditionally, it is served with a local bread known as lavash and mint-chutney. The most famous tujj is served at Challi Point, Khayam Chowk (located on the Boulevard Road).

  • Kahwah

    Kahwah is known to be Kashmir's traditional green tea. It is savoured in every household of the city and served in almost every restaurant. It is prepared by boiling special green tea leaves and strands of the Kashmiri Saffron, Kahwah. Garnished with dry-fruits like almonds or walnuts, it makes for an amazing beverage. The best Kahwah can be savoured at Cafe Arabica and Cafe Robusta located on M.A. Road.

    Noon Chai is basically a type of special salty tea, very popular among the locals in Srinagar. It is pinkish in colour and made with green tea, milk, salt and Soda Bicarbonate.
